UHT of milk (Ultra-high-temperature processing) includes heating for 1 to 8 sec at 135–154°C. Sterile packaging of UHT milk produces a shelf-stable product. Sterile packaging includes placing a sterile product in a sterile package. Such processing must take place in a sterile atmosphere. UHT milk is milk that is processed at ultra-high temperature (UHT). The sterilisation is made through fast heating of milk to a temperature of at least 135°C, keeping it there for a few seconds, and then rapidly cooling it down to ambient temperature.
